Do you have a network management card with a temperature sensor?

To be clear, not all network management cards have environmental monitoring - you need either an AP9619 or AP9631 card. Assuming you have one of those along with a temperature probe connected, you're good to go.
After logging in to the web interface, you should see a number of tabs at the top - you're interested in the "Environment" tab. Here you can configure the high/low & min/max temperature settings. Click on your sensor (either in the Overview section or Temp & Humidity) and configure your settings. The "Help" section is very helpful in case you have any questions - you can access it at the top right next to the "Log Off" button.
Once you've configured the settings to your liking, click on the "Administration" tab and go to the "Notification" sub-tab. Enter your email information in the "Email" subsections (server, recipients, test if you'd like) and then you can double check you'll receive email notifications for temperature events. To do this, click on "by event" under the "Event Actions" section, then on Temperature under Environment Events. Make sure email is enabled for those messages you'd like to receive.
In terms of shutting down your equipment when a threshold is exceeded, you will need to install [PowerChute Network Shutdown|http://www.apc.com/products/family/index.cfm?id=127] on your servers and tell the system to shutdown for different events in "Configure Events" (namely for "Environment: Temperature Probe 1 Out Of Range").
That should help get you started. 🙂

Buzz - Thank you kindly for your response. The reason I was not seeing the option on the UPS/s is that we do not have a temperature probe installed.
Thanks again.
