I'm looking to add a APC Smart-UPS RT 6000VA 208V into the mix at my data center. It's going to be holding up a load of about 11amps (1500w) at max. Normally this thing would be plugged into it's own L6-30R socket. Since those are occupied where it's going, I'd like to plug it into a C20 with a max of 15 A @208 (basically on a APC PDU). What will my issues be? (Note - this is all hypothetical.) Will the unit immediately draw too much power for this source, for instance, while recharging batteries?

There won't technically be any problems doing this, other than the obvious de-rating. Some quick math will tell you that this will give you a maximum draw of 3120 VA; this is excluding any local codes, though, which may vary depending on your area. The battery charger wattage on this unit is 421W, so shouldn't have a huge impact.
If you are sticking to the 11a load as you say, you may be ok, but must keep inrush current in mind. Consider the worst case scenario in your sizing (i.e. all servers powering up at once). Again, also keep local electrical codes in mind.
