We have a Symetra 40k with an AP9617. We would like to be able to shut down servers based on temp. Can the 9631 be added without shutting down the ups, and can the 9617 be left in there as well?

Yes, you can have up to two management cards in most UPS models, including a PX40. And yes, adding the AP9631 with the temp probe can be hot swapped in the open SmartSlot.
For proper operation, I'd install the temp probe in Universal I/O port #1 on your AP9631. Then, you'll just to configure your PowerChute Network Shutdown clients with the IP of your AP9631 (or switch it to the same IP of the AP9617 if you disconnect it from the network or re-program it) so that you can see the environmental options for shutdown in PowerChute.
You'll be able to shutdown on temperature "out of range" which will be basically whatever threshold(s) you enable and whichever one happens first.
