Is conversion of a 200 HP, 2-Speed, 460V, 3P Motor to VFD operation feasible? If so, what are the precautions?

The two speed motor can be used on Altivar. it is necessary to select corectly the drive in accordance with catalogue of the product.

Taking the power into account, I would propose Altivar ATV600 (mainly for "fluid" application) or ATV900 (mainly for "solid" application).

When connecting motor to drive, you can select one of the motor speed and keep this one, and only this one. Selection of drive has to be made according to motor power as well as motor current corresponding to the selected winding (see on motor name plate). I put the catalogue of Altivar Process on cc.
