As far as I know,
Only 1 instance of the smart connector service can run on a machine.
But multiple processor can run inside that instance.
As for the number of processor / quantity of data a smart connector can handle, that will depend on the specification of the machine it is running on.
If you provide more information about what system you want to use, which integration you are trying to achieve, it's difficult to provide more detailed answer.

In general, we have 2 types of application, EBO act as server or/and client to provide/consume data to/from 3rd party platform.
1, 3rd party integration platform consume EBO data via SOAP webservice, we provide smart connector, there are over 10000 points in EBO, how many processor needed?
2, EBO consume data from multiple 3rd party system, all the 3rd party system not support BACnet or Modbus , only support soap webservice, one processor needed for each 3rd party system, how many points can be handled by one processor?
3, EBO provide data to 3rd party platform via smart connector, at the same time, EBO consume date from multiple 3rd party system via smart connector, for these needs, how to configure the smart connector and guarantee the performance?

If the smart connector is running on a dedicated machine, and if that machine have enough resources : >4 CPU, > 12Gb Ram and SSD, I don't think it would be an issue to handle 10000 points.
I saw system with multiple thousands of points running with ease.
The performance of the system will depend on how optimized the processor(s) is/are.
The smartconnector does not provide real-time feature, so execution time may vary depending on the load of the machine, and if other process are holding shared resources.
I think a best practice is to have 1 processor/EWS server for each 3rd party integration.
Then it's up to you to test and see if the machine is powerful enough, and you app dealing with the load correctly.
