I know I saw a place that I could specify the poling interval on a per device basis, but can't seem to find it now. What menu item is it located under?

Dear John,
In order to update the Device Scan Settings, go to Device–>SNMP Device Communication Settings–>Device Scan Settings
Select the device for which you want to update the settings–>Edit Device Scan Settings
I hope it helps.
Regards,
Bala
