Do any of the APC home-targeted units lack the cold-temperature shutoff "feature" of the Back-UPS Pros with the LCD screens that I've been buying? I want it to stay on regardless of temperature... like the old ones used to do.

I don't at this time, but I'll get that when I can (it's out in the field).
I'm trying to find ones that don't shut off. On my larger locations, I'm actually moving to a DC plant instead of traditional UPSes. However, for small sites, a standard UPS is fine (for cost and capacity reasons)... as long as it doesn't shut off.

I am not sure what you're referring to? Are you talking about the operating temperature range of the UPS and saying below a certain temperature, these units won't operate? Could you clarify? "cold temperature shutoff" is not something I've ever heard about...

The newer Back-UPS Pros with the LCDs screens shut off at cold temperatures (around say 0*F). I forget the error on the screen, but my colleagues that have contacted APC support said that the unit got too cold and shut itself off. I have an inquirey pending with them as to what that error code is. (Update: They think it was F07).
I'm trying to find what models will keep working in the cold. I know cold diminishing uptime and battery life expectancy. I just don't want it to shut itself off.

If I look at BR1000G as an example @ http://www.apc.com/resource/include/techspec_index.cfm?base_sku=BR1000G I see that the operating environment is 32ºF as the minimum temperature. Do you have an example of one of the "older" models that does not turn off in your environment to see if the operating environment said anything different?
If I check the documentation section on that web page and look at the PDF user's guide, F07 is indeed a temperature related fault.
This might be a case of something that was added in newer modules that should've been there previously which sounds like what your guess is.
