Hi,
Being inexperienced & assuming it would work I connected an APC SmartUPS 1400 with what I suppose must be a non-APC 9pin serial cable (it is marked as a UPS cable on the shrouding but no other identifiers).
I connected the UPS end in.
As soon as I connected the other end to the 9pin COM port on the server the UPS shutoff completely (taking the server with it). I had to repeat the process twice just to believe my eyes. My colleagues don't believe me and are giving me some right stick!
Is this to be expected? I've seem some articles alluding to it on web searches so I suppose it is so.
Anyone got any concrete references I can look at?

yes, it is. most of the user's guides say it. here is one for example.

the results you get most likely depend on the pinout of the cable you connect - meaning maybe the UPS drops the load, it might beep, it might go in a constant self test, etc
