As I understood we can connect Enterprise Server to SmartConnector using EWS. Does ES requires EWS License or is it included in the SmartConnector License? I am having some trouble knowing the exact extra cost in licenses necessary to develop a solution, so that I can make a business plan.

The info provided above is correct. When using Smart Connector, you do not need to license EWS. The only license fee for the Smart Connector is the deployment license (SXWSWSCDL100001) Smart Connector should be part of the "white list" of connections like those indicated in PA-00349.

As far as I know, you do not need the EWS license for SBO if you use SmartConnector.

That would be the logic choice and if so we don't need to buy the SXWSWEWSX00001 license.
And what about using a SmartConnector Process to access directly Enterprise Server using EWS?

You must have SXWSWEWSX00001. To connect SBO to SmartConnector you must create EcoStruxure Web Service.

In the context of SmartConnector (i.e you are using EwsClient or IManagedEwsClient in a SmartConnector based integration) it has always been my understanding that you do NOT need an EWS license - its usage is superseded by the SmartConnector license - which you DO need for commercial deployments.

I can't imagine anyone would claim that a SBO EWS license of any sort would be needed...
But I think you should look into getting this PA-00349 updated to include SmartConnector: Search - Asset Library | EcoBuilding - The Exchange

I simply let the discussion run because I noticed that this wasn't very clear inside the Schneider commercial strategy. It's a new product and it is understandable.
But for what I notice now I can also deduce that we can also connect to Enterprise Server data and historical trend log using EWS, using for example a Processor Class. Is that true?

Yes. you can connect to any EWS Server from a Processor subclass (using EwsClient or IManagedEwsClient). There are also Reader classes in the Mongoose.Process.Ews namespace that wrap the EWS "messiness" (see ValueItemReader, AlarmItemReader, HistoryItemReader, and SubscriptionReader) to make your life easier.
Alternatively, you can use the RESTful EWS Gateway to front any EWS Server (using the SoapEwsRestProvider) or SBO natively using the SboEwsRestProvider (the latter being available in v2.3 of SmartConnector). Consumption of that could be from any web client (including perhaps a Processor subclass).

My question is more related to Enterprise Server Licensing and not SmartConnector (using EwsClient).
