When setting up the EGX-300 TCP settings, where can we put the DNS servers for Internet access? We are installing these devices in non-DHCP environments that often do not use the Default Gateway as the DNS server (mapped through the router). Is there any place to put these settings so that we can get FTP out to the EOO cloud server?

Well, you are right. But the destination server in EGX is always an IP, not a name. So you must know the IP already, a fixed one. Then you don't need the DNS. This is a limitation in the box. I'm not saying it's a good stuff.

EGX300 does not use name to access any external resource, just static IP adresses so no DNS support is necessary

Sorry. That's not really making sense, at least to me.
Email SMTP and files via FTP and HTTP post often (almost always) go outside the internal network via the Internet so almost always send via outside external resources on the Internet so they would need need DNS Servers to resolve locations on the Internet if the router does not provide it as the Gateway.
For your PC for example, If you use DHCP, devices will get IP/Subnet/Gateway/DNS. If you use static but don't assign DNS, you get no Internet. Try it on your laptop if the router is not a DNS pass through.

Carols is correct. We are adding the ability for DNS to our future products, but it is not available on the EGX today.
