I doubt it. The two battery systems I've seen have the batteries in series so if you removed one then your single battery would only provide half the volts. Now if the batteries were in parallel (not sure if its done that way; I've not seen it.) then you might get away with it at the expense of a serious cut to capacity. The results could be worse if the single battery couldn't provide the needed current. Likely result is the AV rating of the UPS would drop along with the usable time on battery. YMMV.
