If I need to do a quick and dirty test to see if a Smart-UPS is functioning can I simply pull the UPS plug from the wall, check to make sure everything connected to the UPS is still running, and then plug the UPS back into the wall without first powering down the UPS?

Yep, sounds about right.
According to the runtime chart for this unit, 31% load would be around 300-400 watts, so you should be getting around 33-51 mins runtime. I'd expect to get something in the middle there.

Thanks. Everything went smoothly. 🙂 When I performed the test the SUA 1500 was sitting at ~ 31% load. It lasted about 20 minutes before the battery hit ~ 50%. Does that sound about right?

Yep. That is a perfectly reasonable test to ensure the UPS is working properly. You might hear UPS savvy people call it a "pull plug test" or "outage simulation". Regardless, APC support has customers do this all the time as a troubleshooting step.
You can plug the UPS right back in and it should switch back online, no interruption to the load.
