Hi, Customer have SURT10000XLI and request to work on 3 Phase Input mode , the question is: if 1 out of 3 of the input phases is down, what will be the reponse of the UPS ... will it work on the batteries or still charging the batteries by the 2 phases?

hello. i know with symmetra Power Array or Symmetra LX 3 phase units, which have a very similar design in this respect, the power modules still operate online and draw more current from the other two phases. since your UPS is also an online UPS, my educated guess is that it would operate the same way.
