Hi @JonPro,
I attempted to upgrade from v5.0.3 to v7.0.8 and have lost comms with the AP9631,both IP and serial console.

I've just found this FAQ
Video: Using Network Management Card 2 (NMC2) bootmonitor to recover/upgrade firmware - APC USA
Had to go into bootmonitor and factory reset, reconfig IP settings and redownload the SUMX Application.

Too late to help you, but for anyone else in your situation:
If you are below a 5.1.X version of firmware and you try to upgrade to the highest you will lose your IP settings.
You should upgrade to 5.1.7 first, then upgrade to the latest firmware.
If you have local access to the NMC it's not a big deal to lose IP access, but if it's remote...
