I have a AP9630 NMC updated to 7.1.8. I've been trying to get Gmail setup for notifications. Been researching and researching in the forums and everything I've tried has been unsuccessful. Any suggestions?

This assumes you have met all the requirements such as the following:
Personal email account, 2FA enabled, Less Secure Application Password Created.
Have you met all the requirements listed up above?!?
Keeping in mind Google has changed its policy since January 2025 for new accounts.

I just turned on 2FA for the email account that is sending the email but still fails. Yes, personal email
What do you mean Less Secure Application password?

If you followed the instructions on the Google website. You would have been required to create a less secure application and create a (label) and than the system would generate a unique password for that profile.
This unique password is what’s used in the SMTP Server within the NMC.
Again, I’ll stress that since January 2025 this option may be removed or disabled for some email accounts.
Especially if it’s a new email account.

I tried that. So far I have 2FA enabled on the email account sending the email. I created an App password and copied it and put it in the email authentication password field.
I have -
Outgoing email configuration:
From Address: Full email address of the email I setup for 2FA with app password
SMTP Server: smtp.gmail.com
Port: 587
Authentication: Enabled
Username: Full email address again as the 'from address'.
Password: App password that was created
SSL/TLS: If Supported
When testing I get "535-5.7.8 Username and Password not accepted.
If I have entered everything correct and it just won't work, I'll give up on this feature

There obviously is a problem with the credentials being used hence the problem.
You may consider using another email provider such as GMX.
