Hello,
I am new to the subject of Smart Connector, my goal is to export the EBO values to a third-party system. To achieve this, I :
1 - installed and configured the smart connector (picture 1 in attachment)
2 - Configure EWS at the EBO (Enterprise Central EC) (picture 2 in attachment).
But when I try to get the value created in EC I get an empty response (picture 3 in attachment). please any help?

That's correct, the SOAP(means EWS here) provider doesn't support bulk retrieve. That means you have to discover the system and determine what values you are interested in.
This is described in the EWS specification, chapter 6.

From the pictures, it looks like you have set up a bit of everything in your system. It looks like you've set up an EWS server in Smartconnector, and use a EWS Client to connect to that in EBO.
You have also set up a couple of REST endpoints in Smartconnector. The one you are using looks like a Smartconnector REST interface (the port 8084 one), which will interface to a Smartconnector EWS server. You want a Soap Rest gateway that is configured to point to your EC if you want to read from your EC.
I recommend you to look through the documentation again,
