Is there a reason why we cannot use Dashboards when we have a custom Modbus Mastered device type that is logging a default measurement (like Real Energy kWh)? I cannot find a way to get this to display?

This applies to a number of features which don't work with custom device types for real-time or dashboards.
While I'm at it, why can't we log Power Facror values, when they are alrqady mapped and displayed on the live pages?

First...Power Factor
You are correct, the EGX300 does not log Power Factor for any devices. The EGX300's logging feature is quite simplistic. First off, there is no method in the EGX300 to store strings as data. Therefore, there is no way to store "Lead", "Lag", "Inductive", "Capacitive", etc....in the data logs. Also, our devices have several different ways of representing Power Factor. As you indicated above, some of our devices store the value as a IEEE754 floating point number from -2 to 2, storing quadrant information as well. Others require you to read the Real and Reactive Power to determine whether the Power Factor is leading or lagging.... Overall, there is about 5 different ways our devices represent Power Factor in their registers, and the logging mechanism in the EGX300 simply can not handle all of these methods.
Our new devices in development will be able to handle this type of data, and we expect logging of Power Factor to be available.
For the CDTG, there are limitations as to what is supported. For example...summary device pages, real-time trending, control resets, and device discovery are not supported. There is support for real-time data via a simplified basic readings page, device logging and exporting, support for a select set of standard topics, and custom user defined topics.
