I have cold aisle containment "drawn" on my floor plans.
However, this containment does not appear to have the option to adjust the height.
In my Data Center, I have cold aisle containment that extends to the ceiling. To get any reasonable approximation of CFD, you can't have huge gaps where they don't exist.
How do I adjust this ?
Or what is the name of the genome object that I am to use that I can adjust height on? etc

I think you are correct. A feature request may be needed to change this behavior for the cold aisle containment genome in DCO.
The hot aisle containment genome can be ducted to the ceiling but that genome does not allow the containment height to be altered either.
Lets see if someone else has different feedback.

Lets hope they have something - you can't very well represent reality without flexible systems. Having trouble understanding why I can adjust the height of a wall, but not the containment.
Of course, my CFD shows air flow THROUGH solid walls, so I'm not sure it matters, but I'm trying to get it drawn properly.

Hi Eric,
Currently (by design) "Height" of cold/hot aisle containment systems are automatically adjusted by the height of it's equipment.
However, I have captured a feature request that you would like to have the option to configure height for containment systems. I will send you a direct confirmation as well.
Workaround
As a sort of workaround, if we change/increase the height of an equipment in the containment system, then height of containment system would be adjusted. Following image is just to illustrate the idea:
