Can we remove old java version from old portal version installed? Old portal using Java 6 while latest version using Java 7

I don't think that would work. StruxureWare Portal is build on Liferay 6.1, which may work with its shipped Java.
As far as I know there are no plans at the moment to update Portal to the latest Liferay platform.
