I have 2 LX Single phase Symmetra UPSs amongst other Symmetra UPSs.
Site A is AP9631 NMCv2 05 sy v5.1.7 aos v5.1.7 bootmon v1.0.2
Site B is AP9631 NMCv2 08 sy v6.8.0 aos v6.8.2 bootmon v1.0.9
I have found that I can download v7.1.2 for the symmetra
https://www.se.com/au/en/download/document/APC_SY_712_EN/
but ideally would like to take the v5.1.7 to v6.8.0 prior to a possible v7.1.2 update.
that way both units are on same firmware...
The newer GUI in v6 compared to v5 has more options, but worried about 5.1.7 - > 7.1.2

Reach out to APC Support to obtain the 6.X.X firmware. From past experience you have a 50-50 chance of seeing success vs failure. 🤦♂️
So, you asking to stage the upgrade path is not only prudent but shows experience & competence. 👍 Not sure if your team has any (NMC) units set aside as test spares but would kindly suggest you read over the APC FAQ about how to recover the NMC / restore the unit to factory default state on one if you do. ☝️
Having the ability to flash, test, and practice on the bench as they say. Offers critical insight and prepares you for most outcomes should they arise. Insure you have the serial cable for the NMC on hand in case things go sideways! 🙁

I've got a spare AP9619 that we replaced with a AP9641 in Site C recently but the AP9619 is a v1 NMC if things go pair shape.
Site B is now running on 7.1.2 - updated skipping download logs to accept update
Only issue was the UPS name had invalid characters in the string after update.
Site D has a AP9619 but have ordered a AP9641 for it as well for planned maintenance.
Site A is the hold out waiting for a response from anztech.
We monitor the 4 sites with SNMP via PRTG which works well.

After contact from SE Support, was advised I could got from v5.1.7 to v7.1.2
Due to the AP9631 only having telnet enabled, and without having to setup ssh, using the firmware tool FTP option updated the firmware.
Success !!
