I have a few racks to order (a 750mm networking rack and two 600mm server/storage racks) along with a few vertically mounted PDU's. Are there any recommended accessories I should be including with these things to make my life easier for mounting and managing PDU's, cabling etc?

If you get APC NetShelter racks and APC PDUs then there is the option of tool-less install, that works pretty well.
Also locking cables are pretty good, not supported by every PDU but they are useful on the units that do.
Finally shelves, people always forget equipment that can't be mounted and shelves are plain handy.
