Hi,
I am using EWS/Smart Connector with "EwsUser1" (which is created on SBO) credentials and updating objects on SBO.
If the app/solution is being used by multiple people, would SBO log the activity being made by the app as EwsUser1?

The only 'user' information that SBO has when an EWS request is sent to it, is the user who was authenticated to make the request. Hence your case this is "EwsUser1".
There is nothing built into EWS to have a 'sub' user of sorts, the only user information is the user who is used to send the request. Therefore, there is no way to do what you are trying to do without creating multiple users in SBO, and have each user use their specific user. "EwsUser1", "EwsUser2", etc..
