I am posting here for future reference should anyone run into this issue.
After the EVLink PRO AC is installed, you may want to reach it over LAN.
When browsing to it (https://<ev-ip>), and working your way through the SSL/certificate errors, I get a non-descript "Server error" without any further information.
After having called Schneider support with our technician, the rep mentioned that "there is no server" on this device. While this is not entirely true, the point is mainly that Schneider have disabled the Web interface on this device, contrary to what is described in various manuals.
So I would advice not breaking your head on this, and use the "EcoStruxure Charging Configuration Tool" instead, where you can have the same UX as in the app, but from your PC.
