Can someone please help me, if I edit this (open LDAP/active directory bind setting)Is there any impact on the DCE or any services.?

Editing the authentication server bind setting does not cause DCE to reboot. What are you editing? Just the bind DN password? Or are you changing the Bind DN user or authentication type from OpenLDAP to Active Directory? Or Bind authentication type to use SSL?
Just editing the BindDN password shouldn't cause any issues.
However I've seen scenarios where changing the protocol doesn't take properly and will show that it's changed, but DCE is still using the old setting. In this scenario it is better to add a new authentication server, add your users/groups, then delete the old one. Changing the bindDN user may also require removing/re-adding a new authentication server to DCE.
As always, make sure a local user account works before editing an authentication servers in DCE.

so we have to remove the Authentication server and add it again?

You should be able to update the bind DN user without deleting/re-adding the authentication server.
